Description
Sugar cane molasses is a thick, dark brown syrup with a slightly alkaline pH that is a byproduct of sugar production from sugar cane. It contains approximately 40% of sucrose and is rich in iron and other minerals.
Basic content of sugarcane molasses:
– Water : 20%
– dry substance : 80%, including:
– Sucrose : 38.4%
– Other compounds : 41.6%, including:
– Reducing sugars : 20%
– Raffinose : 1.6%
– Carbonate ash : 7 .5%
– Nitrogen-free acids : 3.0%
– Amino acids : 1.0%
– Nitrogen compounds (total) : 0.5%.
The composition of molasses and its consistency depend on:
– Quality and chemical composition of raw material where it is produced,
– Technological process – processing method,
– Storage conditions .
Mineral content in sugarcane molasses:
– Potassium oxide : 4.69% – 5.5%
– Sodium oxide : 0.75% – 0.8%
– Calcium oxide : 0.22% – 0.25%
– Magnesium oxide : 0.03 % – 0.04%
– Iron(III) oxide : 0.03%
– Carbon dioxide : 2.33% – 2.6%
– Phosphorus(V) oxide : 0.05% – 0.06%.
